The month of May is bringing much-needed rain to our land and many of our crops. For others, however, the heavy rains have been harmful. These varying effects of the weather are one of the challenges faced by the people who work every day to feed us, so we must thank them for their dedicated work. To that end, let’s take a look at some of the seasonal produce available to us in Asturias.
May: Enjoy some delicious Swiss chard
One of spring’s most flavorful leafy greens: Swiss chard, which is both delicious and versatile in the kitchen. Throughout this month, you can already see it adding a splash of color to the stalls of our organic farmers at the main markets in Asturias.
Packed with vitamins and antioxidants, Swiss chard is a highly recommended food for our bodies. It’s known for helping us maintain our eye health and also offers endless culinary possibilities: stews, salads, stir-fries, omelets… A whole world of springtime possibilities. And as with all vegetables, it’s important to look for organically grown chard to ensure it has the lowest risk of containing synthetic chemicals and is the tastiest and most nutritious.

Warm Organic Swiss Chard Salad with Apple and Walnuts
If someone tells you that salads are boring, it’s either because they lack imagination or because they haven’t subscribed to our newsletter yet. 😉 And to prove it, here’s a delicious recipe featuring our tasty, seasonal organic Swiss chard:
🗒️ Organic ingredients (serves 2–3):
- A bunch of organic Swiss chard
- 1 apple
- A handful of walnuts
- Blue cheese from Asturias, to taste (we have several organic varieties to choose from)
- Extra virgin olive oil
- Juice from half a lemon
- Salt and pepper
🥄 Preparation:
- Wash the Swiss chard thoroughly and separate the leaves from the stems.
- Cut the stalks into thin strips and sauté them for a few minutes in a little olive oil.
- Add the chopped leaves and cook just until they wilt, while retaining their bright green color.
- Place the warm Swiss chard on a serving platter and add the apple, sliced into thin strips.
- Add the walnuts and a few pieces of cheese.
- Dress with olive oil, lemon juice, salt, and pepper to taste.
🥬 Final details:
If you want to give it an even more spring-like touch, you can add some toasted seeds or tender arugula leaves. It also pairs very well with natural cider or toasted whole-grain bread.
